Persian style eggplant stew

Iran recipe I cut the eggplants into the round pieces, put them all in a dish and add some salt. Let it sit overnight. The next day, I will drain the water in the dish that is from the eggplants and fry the eggplant in a pan with olive oil (any oil would do). I will then freeze the fried eggplants. This step helps to rid of additional oil later on. On the day that I want to make the stew, I dice onion and sautee it, then add mushroom and tomato paste to it and let them all cook together. I also add turmeric, paprika, cumin, garlic powder and pepper. While this is getting ready, I will get the frozen eggplant out and let it partially thaw. Boil some water and add to the eggplant, this will help to bring additional oil out of the eggplant so the final stew does not become oily. Drain the water and oil from the eggplant.l In a Pyrex (or any oven friendly dish), add the onion and mushroom mix, then on top add the eggplant pieces one by one. Put this in the oven at 350 for 15-20 minutes. This will help crisp the outer side of the eggplant. The eggplant stew is now ready. You can serve with bread, rice or eat as such. Oven roasted Chickpeas and Cauliflower

Ingredients
------------
Chickpeas-2 cups
1 1/2 tbs olive oil
1 tbs garam masala
1 1/4 salt

Cauliflower - 1 head- cut into florets
2 tbs olive oil
1 tsp cumin seed
1 tsp salt
1tsp garam masala

Preheat oven to 400F
Toss every 10 mins for about 35 minutes till they are golden coloured.
Keep uncovered to retain crispiness.

Aloo Palak

Saute garlic-2 , ginger, green chilies-4to5, onion-1, Add the spinach After it cools, blend them.

saute turmeric, cumin seeds, the spinach paste and let it boil for few minutes. Now add the boiled potatoes, garam masala-1tbspn, coriander powder-1tbspn, cumin powder-1spn, red chili powder-1/2 tbspn, and salt for taste. Add water only when needed. Cook for 5-10 mins covered until the potato absorbs the flavor.

Serve with rice or roti.

Avocado Chutney

Ingredients
--------------
Avocado- 1 (cut into halves and squeeze once ripe)
Few Coriander leaves
Green chillies- 3 to 4
coconut- few
salt- as required
Red Shallots-2 to 3

Method
--------
Just add all the above ingredients and grind well.

finally sputter some mustard, urad dal and curry leaves and add to it.
Serves 2 to 3 persons.

Instant microwave-cooked asparagus

Ingredients

Asparagus bunch-1
salt, pepper - to taste
lemon juice

Method
---------
Cut the edible part of asparagus.
try to peel the thick end of it to make it even so that it cooks evenly.In a microwavable glass bowl, place this and cover it with a clingwrap with a small vent for the steam to pass. Also to avoid clinging of the wrap on the vegetable.

Let it be for 2 and 30 minutes. Let it stand for a while before you handle(HOT).
Then slice as wanted and serve it with salt,pepper and lemon juice.

Microwave cleaning technique

First, clean the crumbs out of the microwave. Next, fill a microwave-safe bowl with a cup or two of water. Add some lemon juice or a slightly squeezed half lemon to the bowl (some people use a couple of tablespoons of vinegar instead of the lemon). Now nuke it! Microwave that for a few minutes until the water is boiling. Keep the door closed afterward to let the steam work its magic loosening dried-on food. After a few minutes, wipe down the inside of the microwave with a damp cloth. Food splatters should come off easily.

Lima beans curry

Ingredients:
Soak dry lima beans-1 cup (for around 8 hours) or use fresh lima beans or double beans
ginger garlic paste
green chilly - 2
curry leaves
onion -1
tomato-1
coriander powder-1 and half tbspn
chilly powder - 1 tbspn
turmeric powder
Salt to taste
coriander leaves

Method:
Pressure cook lima beans to 3 sounds with turmeric powder.
store this water for later use.

Now saute the seasonings, and dry powders and mix with the pressure cooked water.
let it boil. then add the cooked beans to absorb masala.
let it cook till the mixture turns little moisture.
Ready to serve!

Microwave cooked potato chips

Potato (sliced)
pepper, salt and other seasoning,
oil

place the seasoned potato slices in a plate separately (one doesn't touch another)
Let them cook in a microwave for 4:30 minutes or before it turns brown.

Tasty healthy snack is ready :)

Biitter guord curry from a frnd - Veenu

Boil bittergourd in salted water till tender. Prepare masala -> paste of garlic-ginger + onion paste + Tomato puree .
Heat mustard oil in a pan. Fry ginger+garlic paste, onion paste till light brown. Add salt, turmeric powder, red chilli powder, coriander powder, mustard seeds powder. After 5 mts. add tomato puree . Fry till oil separates in the pan. Slice the boiled bittergourd and take out the bittergourd seeds ( u can add these seeds to the pan ).
Fill bittergourd with this cooked masala and bake the same on a tawa adding little mustard oil

Asparagus masala


Ingredients

Asparagus - 8 or 9
onion-1/2
mustard seeds(optional),fennel seeds, cumin seeds -few
lemon - 7 to 8 drops
Garam Masala-1/2 spoon
coriander powder-1/4 spoon
oil,salt - as required

Method
--------
The soft portion of the asparagus is what I used for cooking. I started to this after a word from 'Kmalar'-one of our family friends.
Saute the spices in oil for few minutes. then let the onion and salt to fry for sometime.
Now add the round cut asparagus . It smells like a herb. after it's cooked for sometime, add the garam masala, lemon juice and coriander powder and now it's ready to eat :)

Idly Flour (using long grain rice)

Ingredients
-----------
Long grain rice 2 and half cups (As the idly rice become very demanding-"M" mami idea)
U.dal- 1 cup soaked for 2 to 3 hours
fenugreek-1teaspoon
Water - Very less needed after grind while mixing other than soaking.

Method
------
Let 2 cups of rice soaked for 6 hours. Meanwhile cook the 1/2 cup of remaining rice.
Grind all the above finely and let it stand overnight so that the flour comes up buffing.

Red kidney beans (as temple prasad or eve snacks)

Ingredients

Rajma(red kidney beans)- 1 cup - soaked overnight
red chilly -4
mustard, cumin seeds, urad dal,hinge,oil,turmeric powder, salt-3/4 tblspn

Method
--------
Pressure cook the soaked rajma with salt for 15 sounds - so that it's little mushy inside.
then drain and keep aside.

Saute the spices and mix well.

Groundnut Chutney

Ingredients

Groundnut-1/2 cup
salt-to taste
red chilly-5
onion(small)-1
Garlic-1 piece
water,oil, tamarind paste- as needed.
mustard, urad dal, cumin seeds, curry leaves

Method
--------
Let the groudnut saute for few mins . Remove the skins.
Keep aside.
Saute the onion, red chillies and garlic also.
Then grind the above well with less water.

Finally, saute the spices in oil and mix well. Now you're ready to eat chutney with Idli or dosa :)

Method
--------
Milk-3/4 cup
jamun packet-1
Water-4cups
Sugar-half to 3/4 cup(as you want the sweet to be)

Make small round of balls as after the process, it gets big after absorbing jeera.

Jeera as was told in rawa laddoo(One of my previous sweets dish)

Tip: As shown behind the jamun packet, but in some packets they ask to mix water.
It tastes better when the dough is made out of milk.

Here, in this picture you could see the jeera fully absorbed. As I liked this consistency, I dint mix further with jeera.
