Chicken Tikka (chicken in foil)


Method
---------
Been thinking to try this for long-this foil method. But never tried.
It's after Meen's house lunch tht I wanted to try it out immediately @ home and it came out well!

Merinate chicken, onion, red pepper with olive oil, corn flour-1tbspn,chilly powder-2 tbspn,coriander powder-1tbspn, ginger-garlic-(2)green chilly paste, curd-2tspn,lemon juice -1tspn like for fish fry . It's better to let them stand for about 2 hours inside fridge.
Later put them individually in a pan covered with foil paper.

In the convectional oven, Keep it for 400degrees for 15 mins and turn to the other side and let it be for another
15-20 mins and now this tender and juicy item is ready to eat!

Chicken Kuruma



Ingredients
------------
Chicken-1/2 kg
curd-3 tblspoons
cashew-4,gr.chilly-4,poppy seeds,fennel seeds,onion-1/2, ginger-garlic-- to grind
Cinnamon, Cardamom,clove,bay leaf-spices
tomato-2
onion-2
coriander leaves,lemon
Ghee-1 1/2 tbspn
coconut(shredded)
turmeric-1/2 tspn, coriander-2 tbspn, chilly powder-1 1/2 tbspn
water-1 cup

Method
---------

Let the spices splutter in ghee with turmeric powder and saute the chopped onion, tomato till they get cooked completely , then mix the ground mixture and saute well .

Now add the chicken-curd mixture and let it cook till the chicken raw colour changes.
Now some water should have come from chicken - along with that add water and let it be in cooker for a sound.

Now add coconut and let it be simmer for another 5 mins and finally add lemon juice and coriander leaves. Now it's ready to serve. Enjoy!

Curd Rice

Ingredients
------------
Cooked rice- 1cup
Spices-mustard,urad dal,channa dal,curry leaves,hinge,gr. chilles-3
Curd, Milk-1/4 cup each, little water
salt, oil

Method
--------
Splutter the spices and mix well with the cooked rice.

Peerkangai thol (Ridge Gourd skin) chutney

Ingredients
------------
Ridge Gourd Skin of 2
onion-1
tomato-1
mustard, urad dal,salt, cumin,curry leaves,oil- as needed.


Method
--------
Saute the ridge gourd skin first along with onion and tomato like for other chutneys.
then grind well.
Finally take a pan separately- splutter the spices and mix it.

Palak paneer


Ingredients
------------
Paneer-1/2 packet
Spinach-1/2 packet
Onion-2
tomato-2
Salt, oil,garam masala- 1 tblspoon
ginger garlic paste,mustard, cumin,red chilly

Method
---------
Heat oil in a pan and fry the paneer pieces on 'medium' heat till they turn slightly brown.
Keep aside.

Saute the onion, tomato, and spinach and grind to a fine paste.
Let the mustard, cumin to splutter , then add red chilly, chopped onion and let them cook till they are well roasted.

Mix the spinach and add garam masala n let cook for 5 mins.
Now add paneer and cook for another 3-4 mins.

Now its ready to serve. :)

Fish(Tilapia) fry



Ingredients
------------
Fish(Tilapia)
Ginger,Garlic,green chilli paste
coriander powder,
chilly powder,Curd, lemon,
salt


Method
--------
Let the fish merinated(mixed well with powders) for 15 mins to 2 hours and then fry in little oil.

Chicken kuzhambu (curry)


Ingredients
------------
Chicken- 1/2 kilo
red chilli -5,fennel,cumin-black pepper powder,fenugreek,curry leaves-spices
Onion- 1 1/2
Garlic-6 pieces
Coriander leaves,
yoghurt-2 spoons
Tamarind Juice
oil, salt
Tomato-2

Method
--------
Wash the chicken with water and let it be with 2 spoons of curd .

let the spices splutter with garlic, onion, tomato, and let the chicken to saute for sometime and then keep in cooker for 15-20 mins . Finally garnish wish coriander and serve.

Kaju Katli (Cashew katli)


Method
--------
Same as like Rawa laddoo recipe.

Rawa Laddoo


Ingredients
------------
Sooji Wheatlets(rava)- roasted -1 cup and a 1/4
sugar- 1/2 cup
raisins,cashew, clove,1/2 spoon cardamom powder, 3/4 cup water,ghee

Method
--------
Roast the rava in ghee and keep aside.
Roast the raisins, cashew and clove also.

Add water, Sugar n sweet and boil for 5 mins.
Add sooji, raisins, cashew, clove . Close the lid and let it sit for 15-20 mins.

They'll become thick . So let it cool.
Then make small laddoos and finish them off the shelf within a week.

Tamarind Rice

Ingredients
-------------
mustard seeds, urad dal, cashew, red chilly, curry leaves, tamarind juice, hinge-spices, gingelly oil, salt - spices
Cooked rice.


Method
--------
Saute the spices and mix well with the cooked rice.

Vegetable masala

Simple, Healthy,tasty and a Colourful dish!

Ingredients
Cauliflower- few florets
Peeled Potato-1 or 2
Peeled Carrot-1
Peas- few
Mustard, urad dal, cumin seeds- as required
Coriander Powder-1 tbspn
Chilly Powder-1tbspn
Salt-to taste.
Ginger -Garlic paste-1tspn
Turmeric powder-1/4 tspn

Method
Cut the potato carrot into small sizes. Saute ginger-garlic paste, then the spices and add the rest of the ingredients.
Only sprinkle water , if required.
Keep on mixing well. After about 15-20 mins kept in simmer flame, Tasty veg. masala is ready! :)
